🍯 Salted Caramel Cracker Bites with Pecans
Ingredients
- 1 box round buttery crackers (such as Ritz), about 40–50 crackers
- 1 cup unsalted butter
- 1 cup packed brown sugar
- ½ cup granulated sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 cup chopped pecans
- ½ teaspoon flaky sea salt
- ½ cup toffee bits, optional
Instructions
1. Prepare the oven:
Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
2. Arrange the crackers:
Place the crackers in a single layer on the prepared baking sheet, keeping them close together.
3. Make the caramel:
Add butter, brown sugar, granulated sugar, and heavy cream to a saucepan over medium heat. Stir until the butter melts and the mixture comes to a gentle boil.
4. Cook:
Continue boiling for 3–4 minutes, stirring constantly, until the mixture becomes thick and glossy.
5. Add flavor:
Remove from heat and stir in vanilla and cinnamon.
6. Coat the crackers:
Pour the hot caramel evenly over the crackers. Use a spatula to spread it so the crackers are well coated.
7. Add pecans:
Sprinkle chopped pecans and optional toffee bits over the top.
8. Bake:
Bake for 8–10 minutes, until the caramel is bubbling and golden.
9. Finish:
Remove from the oven and immediately sprinkle with flaky sea salt.
10. Cool:
Let everything cool completely until the caramel becomes firm. Break apart into bite-sized pieces and serve.

For an extra-rich version, drizzle the cooled bites with melted white or semi-sweet chocolate before adding the final sprinkle of sea salt.
