A beautiful golden, crusty homemade bread topped with fresh rosemary, garlic, and flaky sea salt. Soft and airy inside with a deliciously crisp crust.

 

Ingredients

 

For the dough:

  • 3 cups (375 g) all-purpose or bread flour
  • 1½ teaspoons salt
  • 1 teaspoon sugar
  • 2¼ teaspoons (1 packet) instant dry yeast
  • 1¼ cups (300 ml) warm water
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh rosemary, finely chopped

For topping:

  • 1–2 tablespoons olive oil
  • 1–2 cloves garlic, minced
  • 1 tablespoon fresh rosemary
  • Flaky sea salt, to taste
  • A few fresh rosemary sprigs

Instructions

 

1. Activate the yeast:

Mix warm water, sugar, and yeast in a bowl. Let it sit for about 5–10 minutes, until slightly foamy.

2. Make the dough:

Add flour, salt, olive oil, minced garlic, and chopped rosemary. Mix until a rough dough forms.

3. Knead:

Knead for 8–10 minutes by hand, or about 5–6 minutes with a stand mixer. The dough should become smooth and slightly tacky.

4. First rise:

Place the dough in a lightly oiled bowl. Cover and let it rise in a warm place for 1–1½ hours, or until doubled in size.

5. Shape:

Gently punch down the dough and shape it into a round boule. Place it on parchment paper or a lightly floured baking sheet.

6. Second rise:

Cover loosely and let it rest for 30–45 minutes.

7. Prepare the topping:

Mix olive oil with minced garlic and chopped rosemary.

8. Score the bread:

Brush the loaf lightly with the garlic-rosemary oil. Using a sharp knife or bread lame, make several deep decorative cuts across the top.

9. Add seasoning:

Sprinkle generously with flaky sea salt and add a few rosemary sprigs.

10. Bake:

Preheat the oven to 220°C (425°F). Bake for 30–35 minutes, until deeply golden brown and the loaf sounds hollow when tapped underneath.

11. Cool:

Transfer to a wire rack and let it cool for at least 30 minutes before slicing.

✨ Tips

For an extra-crispy crust, place a small oven-safe dish of hot water in the oven while baking.

Let the bread cool before cutting so the inside stays soft and doesn’t become gummy.

 

Fresh rosemary gives the best flavor.

For a stronger garlic flavor, brush the hot bread with a little garlic-infused olive oil immediately after baking.
