Crispy tortilla chips piled high with seasoned ground beef, melted cheese, fresh lettuce, tomatoes, black olives, and creamy avocado. This easy loaded nachos recipe is perfect for parties, game nights, or a quick family snack!
Ingredients
For the Beef
- 1 lb (450 g) ground beef
- 1 tablespoon olive oil
- ½ small onion, finely diced
- 2 cloves garlic, minced
- 1½ tablespoons taco seasoning
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ¼ cup water
For the Nachos
- 1 large bag (about 10–12 oz / 280–340 g) tortilla chips
- 1½ cups shredded cheddar cheese
- 1 cup shredded Monterey Jack or Mexican-blend cheese
- 1 cup chopped lettuce
- 2 medium tomatoes, diced
- ½ cup sliced black olives
- 1 avocado, diced or mashed
- ½ cup sour cream
- ¼ cup sliced jalapeños, optional
- ¼ cup chopped fresh cilantro
- ½ cup salsa
Instructions
1. Cook the Beef
Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes until softened.
Add the minced garlic and cook for about 30 seconds.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon until browned and fully cooked.
Drain excess grease if necessary.
Add taco seasoning, paprika, cumin, black pepper, salt, and water. Stir well and simmer for 2–3 minutes, until the seasoning coats the beef and most of the liquid has evaporated.
2. Prepare the Nachos
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or foil.
Spread a layer of tortilla chips evenly over the tray. Sprinkle some cheddar and Monterey Jack cheese over the chips, then add a portion of the seasoned beef.
Add another layer of chips, followed by more cheese and beef. Layering helps ensure that the cheese and beef reach the chips underneath rather than sitting only on top.
3. Bake
Bake for approximately 7–10 minutes, or until the cheese is completely melted and bubbling around the edges.
Keep a close eye on the chips so they don’t burn.
4. Add the Fresh Toppings
Remove the nachos from the oven and immediately top with:
Chopped lettuce
Diced tomatoes
Black olives
Avocado
Cilantro
Jalapeños, if using
Drizzle with sour cream and spoon salsa over the top.
5. Serve
Serve immediately while the chips are hot and the cheese is gooey. For the best texture, add the fresh toppings after baking so the lettuce and tomatoes remain crisp.
