Cinnamon Apple Cottage Cheese Bake

1 cup Low-fat or full-fat cottage cheese

1 large Egg

1 medium Apple (Honeycrisp or Granny Smith work best), peeled and diced

1 tsp Ground cinnamon (plus extra for dusting)

1 tbsp Maple syrup or honey (optional, for sweetness)

1/2 tsp Vanilla extract

A pinch of Salt

Prep the Oven: Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish

Combine the Base: In a small mixing bowl, whisk together the cottage cheese, egg, vanilla extract, and sweetener (if using) until well combined.

Season the Apples: In a separate bowl, toss the diced apples with the 1 teaspoon of cinnamon until they are evenly coated.

Assemble: Fold about half of the cinnamon apples into the cottage cheese mixture. Pour the mixture into your prepared baking dish.

Top It Off: Arrange the remaining diced apples on top of the mixture the apples should sit prominently on the surface. Finish with an extra dusting of cinnamon.

Bake: Place in the oven and bake for 25–30 minutes, or until the center is set and the edges are slightly golden.

Serve: Let it cool for a few minutes before eating. The texture will firm up slightly as it cools.
