6 large eggs

1 cup cottage cheese (preferably small curd for a smoother texture)

1 cup fresh baby spinach, chopped

1/2 cup feta cheese, crumbled

1/4 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

Non-stick cooking spray or olive oil for greasing
Instructions

Preheat and Prep: Preheat your oven to 375°F (190°C). Generously grease a standard 12-cup muffin tin with cooking spray to ensure the egg bites release easily.

Blend the Base: In a blender or large mixing bowl, combine the eggs, cottage cheese, salt, pepper, and garlic powder. Blend or whisk until the mixture is smooth and aerated.

Add the Mix-ins: Stir in the chopped spinach and half of the crumbled feta by hand.

Fill the Tin: Pour the egg mixture into the muffin cups, filling each about 3/4 full. Top each bite with the remaining feta cheese.

Bake: Place in the oven and bake for 18–20 minutes. The bites should be puffed up and set in the middle, with a light golden brown color on top

Cool and Serve: Let the bites rest in the pan for 5 minutes (they will deflate slightly as they cool). Use a silicone spatula or knife to gently pop them out and enjoy.
