Ingredients
Dough
- ½ tsp yeast (3 g)
- 1 tsp sugar (5 g)
- 2 cups warm milk (400 ml)
- 5 cups all-purpose flour (about 530 g)
- 1 tsp salt (6 g)
- 140 g softened butter
Topping
- 3–4 potatoes, thinly sliced
- 1–1½ cups shredded mozzarella or cheese of choice
- Salt & black pepper to taste
- Dried herbs or fresh dill/rosemary (optional)
- 2 tbsp cream or milk (optional for softer potatoes)
Instructions
1. Prepare the Dough
In a large bowl:
- Mix warm milk, sugar, and yeast.
- Let sit 5–10 minutes until slightly foamy.
- Add salt and gradually mix in flour.
- Knead until soft and smooth.
Cover and let rise for about 45–60 minutes.
2. Shape the Dough
Roll dough into a large rectangle on a floured surface.
Transfer to a parchment-lined baking tray.
Spread softened butter over the dough.
Fold or layer lightly if desired for extra flaky texture.
3. Add the Toppings
Arrange thin potato slices evenly over the dough.
Season with:
- salt
- pepper
- herbs
Sprinkle generously with cheese.
4. Bake
Bake in a preheated oven at:
- 375°F (190°C)
- for 30–40 minutes
Bake until:
- edges are golden brown
- cheese is bubbly
- potatoes are tender
5. Serve
Slice into strips or squares and serve warm.

- Slice potatoes very thin for even cooking
