These easy beef enchiladas are warm, cheesy, hearty, and perfect for busy weeknights. They come together with simple ingredients but taste like full comfort food straight from the oven.
Ingredients
- 1 pound ground beef
- 1 can enchilada sauce
- 1½–2 cups shredded cheese
- 6–8 flour tortillas
Optional Additions
- 1 small onion, chopped
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt & black pepper
- 1 can diced tomatoes with green chiles
- Sour cream for serving
- Cilantro or parsley for garnish
Instructions
1. Cook the Beef
Heat a skillet over medium heat.
Cook:
- ground beef
- onion (if using)
Break apart while cooking until browned.
Drain excess grease.
Season with:
- garlic powder
- chili powder
- cumin
- salt & pepper
2. Warm the Tortillas
Warm tortillas in:
- microwave for a few seconds
OR - dry skillet
This keeps them soft and easy to roll.
3. Assemble the Enchiladas
- Spread a little enchilada sauce in the baking dish.
- Add beef and cheese to each tortilla.
- Roll tightly and place seam-side down.
Repeat with remaining tortillas.
4. Add Sauce & Cheese
Pour remaining enchilada sauce over the top.
Sprinkle generously with cheese.
5. Bake
Bake at 375°F (190°C) for 20–25 minutes until:
- cheese melts
- sauce bubbles
- top becomes golden
Let rest 5–10 minutes before serving.
