Easy Beef Enchiladas

These easy beef enchiladas are warm, cheesy, hearty, and perfect for busy weeknights. They come together with simple ingredients but taste like full comfort food straight from the oven.

Ingredients

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 1½–2 cups shredded cheese
  • 6–8 flour tortillas

Optional Additions

  • 1 small onion, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt & black pepper
  • 1 can diced tomatoes with green chiles
  • Sour cream for serving
  • Cilantro or parsley for garnish

Instructions

1. Cook the Beef

Heat a skillet over medium heat.

Cook:

  • ground beef
  • onion (if using)

Break apart while cooking until browned.

Drain excess grease.

Season with:

  • garlic powder
  • chili powder
  • cumin
  • salt & pepper

2. Warm the Tortillas

Warm tortillas in:

  • microwave for a few seconds
    OR
  • dry skillet

This keeps them soft and easy to roll.

3. Assemble the Enchiladas

  1. Spread a little enchilada sauce in the baking dish.
  2. Add beef and cheese to each tortilla.
  3. Roll tightly and place seam-side down.

Repeat with remaining tortillas.

4. Add Sauce & Cheese

Pour remaining enchilada sauce over the top.

Sprinkle generously with cheese.

5. Bake

Bake at 375°F (190°C) for 20–25 minutes until:

  • cheese melts
  • sauce bubbles
  • top becomes golden

Let rest 5–10 minutes before serving.
