Delicious Mango Slaw
Ingredients
- 2 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1 ripe mango, julienned
- 1/2 red bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
Dressing
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon hone
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Directions
In a large bowl, combine green cabbage, purple cabbage, mango, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together lime juice, olive oil, honey, Dijon mustard, salt, and pepper.
Pour dressing over the slaw and toss well to coat evenly.
Let sit for 10–15 minutes to allow flavors to blend.
Serve chilled as a side dish or topping for tacos, wraps, or grilled chicken.
