Cheesy Beef Stuffed Flatbreads
Ingredients
The Dough:
2 cups All-purpose flour
¾ cup Greek yogurt (makes the dough soft and tangy)
½ tsp Salt
1 tsp Baking powder
Note: You can use store-bought pizza dough or large flour tortillas in a pinch!
The Beef Filling:
1 lb Lean ground beef
½ Yellow onion (finely diced)
2 cloves Garlic (minced)
1 tsp Cumin
1 tsp Smoked paprika
½ tsp Cinnamon (the secret to that authentic Mediterranean flavor)
Salt & Black pepper to taste
The Melty Bits & Sides:
1 ½ cups Shredded cheese (Mozzarella or a Cheddar blend)
Garnish: Fresh parsley
Dip: Greek yogurt mixed with lemon juice and dried mint (visible in the bowl)
Instructions
Make the Dough: Mix flour, yogurt, salt, and baking powder in a bowl. Knead for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
Cook the Filling: In a skillet over medium-high heat, brown the ground beef with the onions and garlic. Stir in the cumin, paprika, cinnamon, salt, and pepper. Drain any excess fat and let the mixture cool slightly.
Assemble: Divide the dough into 4 balls. Roll each ball out into a thin circle (about 8 inches).
Stuff It: On one half of the dough circle, pile a generous layer of cheese, followed by the beef mixture, and another layer of cheese. Fold the other half over to create a semi-circle and pinch the edges tight to seal.
The Sear: Heat a lightly oiled skillet or griddle over medium heat. Place the flatbread in the pan and cook for 3–4 minutes per side. You want that deep golden-brown spotting (char) seen in your photo.
Serve: Slice them into triangles. Serve hot while the cheese is stretchy, with the yogurt dip, sliced cucumbers, and tomatoes on the side.
