White Bean & Spinach Soup
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 2 cans white beans, drained and rinsed
- 4 cups vegetable broth
- 3 cups fresh spinach
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes, optional
- 1 teaspoon lemon juice
Optional
- 1 small carrot, chopped
- 1/2 teaspoon dried oregano or thyme
- Toasted whole-grain bread for serving
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and celery. Cook for 4 to 5 minutes until soft.
- Add garlic and cook for 30 seconds.
- Add beans, vegetable broth, salt, pepper, and chili flakes.
- Bring to a boil, then lower the heat and simmer for 10 to 12 minutes.
- Add spinach and cook for 2 to 3 minutes until wilted.
- Stir in lemon juice.
- Taste and adjust salt and pepper.
- Serve hot.
Serving idea
Serve with a slice of toasted bread.
