Ingredients
- 2 boneless chicken breasts or 4 chicken thighs
- 3 carrots, peeled and sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon parsley
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1 tablespoon lemon juice
Instructions
- Season the chicken with salt, pepper, paprika, oregano, thyme, and parsley.
- Heat 1 tablespoon olive oil in a pan over medium heat. Cook chicken for 5 to 7 minutes per side until golden and fully cooked. Remove.
- In the same pan, add butter, remaining olive oil, and garlic. Sauté for 30 seconds.
- Add carrots and cook for 6 to 8 minutes until tender.
- Return chicken to the pan, drizzle with lemon juice, and spoon the garlic herb mixture over the top.
- Serve the chicken with the carrots on the side.
