Garlic Herb Chicken & Carrot Plate

Ingredients

  • 2 boneless chicken breasts or 4 chicken thighs
  • 3 carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon parsley
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken with salt, pepper, paprika, oregano, thyme, and parsley.
  2. Heat 1 tablespoon olive oil in a pan over medium heat. Cook chicken for 5 to 7 minutes per side until golden and fully cooked. Remove.
  3. In the same pan, add butter, remaining olive oil, and garlic. Sauté for 30 seconds.
  4. Add carrots and cook for 6 to 8 minutes until tender.
  5. Return chicken to the pan, drizzle with lemon juice, and spoon the garlic herb mixture over the top.
  6. Serve the chicken with the carrots on the side.
