Ingredients
For the base:
- 1 cup (125 g) all-purpose flour
- 1/2 cup (100 g) sugar
- 1/2 cup (115 g) butter, melted
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
For the creamy topping:
- 8 oz (225 g) cream cheese, softened
- 2 eggs
- 1/2 cup (100 g) sugar
- 1 tsp vanilla extract
- 1/2 cup (120 ml) milk
- 1 tbsp cornstarch
Instructions
- Preheat oven to 350°F (180°C) and grease a 9×9 inch baking dish.
- Make the base:
In a bowl mix melted butter and sugar. Add the egg and vanilla and whisk well.
Stir in flour, baking powder, and salt until smooth. - Bake the base:
Spread the batter in the baking dish and bake for 10–12 minutes until slightly set. - Prepare the topping:
In another bowl beat cream cheese and sugar until smooth.
Add eggs one at a time, then mix in vanilla, milk, and cornstarch until creamy. - Assemble:
Pour the cream cheese mixture over the partially baked base. - Bake again:
Bake for 30–35 minutes until the top is golden and the center is set. - Cool completely:
Let it cool, then refrigerate for 1–2 hours for the best texture. - Serve:
Cut into squares and enjoy. You can dust with powdered sugar if desired.
