Low-Carb Chocolate Cottage Cheese Mousse

1 cup cottage cheese (preferably low-fat)

2-3 tablespoons unsweetened cocoa powder

2-3 tablespoons low-carb sweetener (erythritol or stevia)

1 teaspoon vanilla extract

A pinch of salt

Optional: Sugar-free chocolate chips or nuts for garnish
Instructions

Blend: Place the cottage cheese, cocoa powder, sweetener, vanilla, and salt into a blender or food processor.

Smooth: Process on high until the mixture is completely smooth and no cottage cheese curds remain.

Chill: Transfer to a bowl or ramekin and refrigerate for at least 30 minutes to allow the texture to set.
