2 medium russet potatoes (or any baking potatoes)

 

1 cup cottage cheese (low-fat or full-fat)

 

½ cup cherry tomatoes, halved

 

½ cucumber, finely chopped

 

2 tbsp olives, sliced

 

1 tbsp olive oil

 

1 tsp fresh lemon juice

 

½ tsp dried oregano

 

Salt & black pepper to taste

 

Fresh parsley (optional garnish)

Preheat your oven to 200°C (400°F). Wash and scrub the potatoes thoroughly, then pat them dry. Pierce each potato a few times with a fork. Rub lightly with olive oil and sprinkle a little salt over the skin. Place directly on the oven rack and bake for 45–60 minutes until the skin is crispy and the inside is soft and fluffy.

 

While the potatoes bake, prepare the topping. In a bowl, mix cottage cheese with lemon juice, dried oregano, salt, and black pepper. Chop the cucumber, halve the cherry tomatoes, and slice the olives.

 

Once baked, cut the potatoes open and fluff the inside with a fork. Spoon generous cottage cheese on top, then add cucumber, tomatoes, and olives. Garnish with fresh parsley and an extra drizzle of olive oil.
