Avocado Tuna Herb Salad
Ingredients:
1 ripe avocado, diced
1 can tuna in water or olive oil, drained
¼ cup red onion, finely chopped
¼ cup fresh parsley, chopped
1 tbsp lemon juice
1 tsp lemon zest
Salt & black pepper to taste
Optional: ½ tsp Dijon mustard or chili flakes for a kick
Directions:
Prep Ingredients: Dice avocado, finely chop red onion and parsley. Zest and juice lemon.
Mix the Salad: In a bowl, combine tuna, avocado, red onion, parsley, lemon juice, and zest. Gently stir to mix without mashing avocado.
Season: Add salt, pepper, and optional seasonings. Mix lightly again.
Serve: Enjoy immediately on toast, lettuce wraps, with crackers, or straight from the bowl!
