By cracking eggs directly into a heatproof bowl or pan and steaming them inside a pot or pressure cooker, you cook all 10 eggs into a single solid mold. Once turned out, the block can be chopped into clean, uniform pieces in seconds, completely avoiding cracked shells or damaged whites.

Step-by-Step Instructions:

Step 1: Prep the Steam Vessel

Select a heatproof round dish, cake pan, or glass/ceramic bowl that fits comfortably inside a larger pot or Instant Pot.

Coat the interior of the bowl generously with cooking spray or neutral oil. This prevents the egg whites from sticking during the steaming process.

Carefully crack all 10 eggs directly into the greased dish. Leave the yolks intact; do not whisk or stir them.

Step 2: Steam the Egg Mass

Method A: Stovetop Steam

Pour 1 cup of water into the bottom of a wide pot with a lid.

Set a steamer basket or low metal trivet in the pot, then lower the dish of raw eggs onto it.

Place the lid securely on top and bring the water to a boil over medium-high heat.
