Ingredients
For the Bread:
1 large sourdough loaf or crusty boule
2 tbsp olive oil or melted butter
For the Filling:
1 cup fresh spinach, finely chopped
1 cup canned artichoke hearts, drained and chopped
4 oz cream cheese, softened
1/2 cup sour cream or Greek yogurt
1 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
2 cloves garlic, minced
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Step-by-Step Instructions
Prep Bread
Preheat oven to 375°F. Place bread on cutting board. Cut in criss-cross pattern, make deep cuts both ways without cutting through the bottom. You should get small pull-apart cubes still attached.
Make Filling
In medium bowl, mix softened cream cheese, sour cream, garlic, garlic powder, onion powder, salt and pepper until smooth. Fold in chopped spinach, artichokes, 3/4 cup mozzarella and Parmesan.
Stuff the Bread
Place bread on foil-lined baking sheet. Gently open the cuts and stuff spinach artichoke mixture deep into all crevices with spoon or small spatula. Brush outside with olive oil.
Add Cheese on Top
Sprinkle remaining 1/4 cup mozzarella over top, letting it get into cracks.
Bake
Wrap loosely in foil and bake for 15 minutes. Uncover and bake 10-12 minutes more until cheese is melted, bubbly and golden brown.
Serve
Let cool 5 minutes. Serve warm on plate. Pull apart pieces and enjoy cheesy goodness.
