Ground Beef and Zucchini Skillet

  1. Ground Beef and Zucchini Skillet
Ingredients
– 1 pound ground beef
– 2 medium zucchini, diced
– 1 small onion, chopped
– 3 garlic cloves, minced
– 1 cup cherry tomatoes, halved
– 1 tablespoon olive oil
– 1 teaspoon Italian seasoning
– ½ teaspoon paprika
– ½ teaspoon salt, or to taste
– ¼ teaspoon black pepper
– ½ cup shredded mozzarella cheese (optional)
– 2 tablespoons fresh parsley, chopped
Instructions
1. Brown the beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned and thoroughly cooked. Drain excess fat if necessary.
2. Add the aromatics: Stir in the chopped onion and cook for 2–3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
3. Cook the zucchini: Add the diced zucchini and cherry tomatoes. Sprinkle in Italian seasoning, paprika, salt, and black pepper. Stir well to coat everything evenly.
4. Simmer: Cook for 6–8 minutes, stirring occasionally, until the zucchini is tender but still holds its shape and the tomatoes begin releasing their juices. Avoid overcooking to prevent watery vegetables.
5. Add cheese: Sprinkle mozzarella over the mixture, cover the skillet, and cook for 1–2 minutes until the cheese melts.
6. Garnish and serve: Finish with fresh parsley and serve warm on its own or alongside cauliflower rice, regular rice, or a fresh green salad.
