Creamy Pistachio Protein Gelato

Ingredients

  • 2 cups unsweetened almond milk
  • 1 cup Greek yogurt or cottage cheese
  • ½ cup shelled pistachios
  • 1 scoop vanilla protein powder
  • 2–3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional but delicious)
  • 2 tablespoons chopped pistachios
  • 2 tablespoons raisins or dark chocolate chips
  • Pinch of salt

Instructions

  1. Blend the base
    Add almond milk, yogurt, pistachios, protein powder, sweetener, vanilla, almond extract, and salt to a blender. Blend until smooth and creamy.
  2. Add mix-ins
    Stir in chopped pistachios and raisins or chocolate chips.
  3. Freeze
    Pour mixture into a freezer-safe container. Freeze 3–4 hours, stirring every hour for a creamier texture.
  4. Serve
    Let sit at room temperature for 5–10 minutes before scooping.
