Greek Yogurt Chicken Salad
I’ve been hooked on this one — lighter but still super satisfying. Definitely one I keep on repeat!
Ingredients:

1 pound cooked chicken breast, diced

½ cup plain Greek yogurt (instead of mayo)

¼ cup chopped cucumber

¼ cup chopped red onion

2 tablespoons crumbled feta cheese

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Optional: a few olives or fresh dill
Instructions:

In a large bowl, combine diced chicken, Greek yogurt, cucumber, onion, feta, lemon juice, and oregano.

Mix everything until well coated.

Season with salt and pepper to taste.

Chill in the fridge for 30 minutes so the flavors blend together.

Serve in lettuce wraps, with low-carb pita, or just eat it straight from the bowl.
