Dragon Fruit Chia Seed Drink
Description
This Dragon Fruit Chia Seed Drink is a creamy, refreshing blend of white-fleshed dragon fruit, milk, and soaked chia seeds. Dragon fruit has a delicate sweetness, while chia seeds give the drink a lightly thickened texture. A little vanilla and optional honey bring the flavors together without overpowering the fruit.
White-fleshed dragon fruit creates the pale, speckled appearance shown in the picture. Its tiny black seeds are naturally present in the fruit, and the soaked chia seeds add more texture. You can also use pink-fleshed dragon fruit for a vibrant pink version.
Enjoy this drink chilled with breakfast or as an afternoon snack. There is no cooking required—simply soak, blend, stir, and refrigerate.
Prep Time: 10 minutes
Soaking Time: 20–30 minutes
Total Time: 30–40 minutes
Servings: 2
Yield: Approximately 3 cups
Ingredients
For the Dragon Fruit Drink
- 1 medium white-fleshed dragon fruit, approximately 1 cup (200 g) flesh
- 1½ cups cold milk, dairy or unsweetened plant-based milk
- ½ cup cold drinking water, divided
- 2 tablespoons chia seeds
- 1–2 teaspoons honey or maple syrup, optional
- ¼ teaspoon vanilla extract, optional
- Ice cubes, for serving, optional
Step-by-Step Instructions
1. Soak the Chia Seeds
Place the chia seeds in a bowl or jar with ½ cup of the milk and ¼ cup of the water.
Stir thoroughly, making sure no dry seeds remain stuck together. Let stand for 5 minutes, then stir again to break up any clumps.
Refrigerate for another 15–25 minutes, until the seeds develop a gel-like coating and the mixture thickens slightly. Soaking them separately helps distribute them evenly throughout the finished drink.
2. Prepare the Dragon Fruit
Wash the outside of the dragon fruit before cutting it. Slice it in half lengthwise, then scoop out the flesh with a spoon.
Cut the flesh into small pieces. Discard the skin.
Taste a piece before adding sweetener, since dragon fruit can range from mildly sweet to fairly neutral.
3. Blend the Fruit and Milk
Add the dragon fruit flesh, remaining 1 cup of milk, remaining ¼ cup of water, optional vanilla, and 1 teaspoon of your chosen sweetener to a blender.
Blend briefly until smooth and creamy. The fruit’s tiny black seeds will remain visible as fine speckles.
Avoid blending longer than necessary, which can introduce extra foam.
4. Stir in the Soaked Chia Seeds
Pour the blended drink into a jug. Add the soaked chia mixture and stir well.
Stirring rather than blending at this stage keeps the chia seeds intact and gives the drink an even, gently textured consistency.
If you prefer a completely blended texture, pulse everything together briefly instead.
5. Adjust the Consistency
Taste and add the remaining teaspoon of sweetener only if needed.
For a thinner drink, stir in additional cold milk or water, one tablespoon at a time. For a thicker consistency, refrigerate for another 15–20 minutes.
The drink will continue thickening as the chia seeds absorb liquid.
6. Chill and Serve
Divide between two glasses and serve cold. Add a few ice cubes if desired, remembering that melting ice will dilute the flavor.
For the bottled presentation shown in the image, transfer the drink into clean, food-safe bottles, close tightly, and refrigerate. Stir or shake gently before pouring.
Tips and Notes
- Choose white-fleshed dragon fruit: This gives the pale color shown in the photograph.
- Use ripe fruit: Look for brightly colored skin with a slight give when gently pressed.
- Stir chia twice: Stirring immediately and again after 5 minutes helps prevent clumps.
- Choose your milk: Dairy milk gives a creamy finish, while unsweetened soy, almond, or coconut beverage offers different flavors. Canned coconut milk is much richer and may need dilution.
- Sweeten after tasting: Dragon fruit and milk may provide enough sweetness on their own.
- Keep it pourable: If preparing ahead, leave the mixture slightly thinner because it will thicken during refrigeration.
- Make a spoonable version: Reduce the liquid for a pudding-like consistency and serve in small bowls with diced fruit.
Storage
Store in a clean, tightly covered container in the refrigerator and enjoy within 24–48 hours. Use fresh milk and follow its storage instructions.
Some separation is normal. Shake or stir before serving, and add a splash of milk if the drink becomes too thick.
The bottles in the picture are a serving idea; this homemade drink must remain refrigerated.
Frequently Asked Questions
Can I use pink dragon fruit?
Yes. The method stays the same, but the drink will turn bright pink or magenta.
Can I use frozen dragon fruit?
Yes. Use approximately 1 cup of frozen pieces. Blend with the milk, adding a little extra liquid if needed. Frozen fruit creates a thicker, colder drink.
Can I make it without milk?
Yes. Replace the milk with coconut water or drinking water. The result will be lighter and less creamy than the pictured version.
Why did my drink become very thick?
Chia seeds continue absorbing liquid after mixing. Stir in additional milk or water until the drink is easy to pour.
Do I need to heat the mixture?
No. Despite the saucepan shown in the collage, this version requires no heating.
