INGREDIENTS:

½ medium red bell pepper chopped

½ medium green bell pepper chopped

2 medium scallions chopped

1 can (15 oz) corn drained

1 can (15 oz) black beans drained and rinsed

1 tbsp corn oil

2 tbsp lime juice

8 ozs boneless skinless chicken breast cooked and chopped

2 tbsp reduced-sodium taco seasoning mix
-
4 tbsp fresh cilantro chopped

4 tbsp sour cream – reduced-fat
INSTRUCTIONS:

In a large mixing bowl, add red sweet pepper, green bell pepper, scallions, corn, and black beans. Mix well.

Add lime juice and oil to bean mixture; toss to coat

Mix in (toss) taco seasoning, cilantro, and chicken.

Top each serving with sour cream, if desired.
