Creamy Cucumber Dill Salad

Ingredients

3 large English cucumbers, thinly sliced
½ small red onion, thinly sliced
¾ cup sour cream
2 tbsp mayonnaise
2 tbsp fresh dill, finely chopped
1 tbsp fresh lemon juice
1 tsp white vinegar
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp salt
¼ tsp black pepper
1 tsp sugar, optional

Instructions

1. Prepare the Cucumbers:
Wash and thinly slice the cucumbers. Place them in a large bowl and sprinkle with a little salt. Let them sit for 10–15 minutes. Drain and gently pat them dry with paper towels. This removes excess moisture and keeps the salad from becoming watery.
2. Make the Dressing:
In a separate bowl, whisk together sour cream, mayonnaise, lemon juice, vinegar, Dijon mustard, minced garlic, fresh dill, black pepper, and sugar if using. Mix until smooth and creamy.
3. Combine:
Add the sliced cucumbers and red onion to a large serving bowl. Pour the creamy dill dressing over the vegetables and gently toss until every slice is evenly coated.
4. Chill:
Cover the salad and refrigerate for at least 20–30 minutes. Chilling allows the cucumber to absorb the fresh dill and tangy dressing flavors.
5. Serve:
Give the salad a gentle toss before serving. Garnish with additional fresh dill and a few thin cucumber slices. Serve chilled as a refreshing side dish.

Tips

For maximum crunch, use English cucumbers and don’t skip draining the sliced cucumbers. Fresh dill provides the best flavor, but dried dill can be used in a pinch. For extra brightness, add a little more lemon juice just before serving.
