🛒 Ingredients

 

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tbsp olive oil

For the Filling:

  • 1 cup fresh spinach
  • 1 cup shredded or sliced mozzarella cheese
  • ½ cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Balsamic Glaze:

  • ½ cup balsamic vinegar
  • 1–2 tbsp honey or brown sugar
  • 1 tbsp olive oil
  • 1 garlic clove, minced

 

For Topping:

  • Extra cherry tomatoes
  • Fresh basil
  • Red pepper flakes, optional
  • Parmesan cheese, optional

👩‍🍳 Instructions

 

1. Prepare the chicken

Preheat your oven to 400°F (200°C). Pat the chicken breasts dry. Carefully cut a pocket horizontally into the thickest part of each chicken breast, making sure not to cut all the way through.

 

2. Season

Rub the chicken with olive oil, salt, black pepper, Italian seasoning, and garlic powder. Set aside while you prepare the filling.

3. Make the filling

Heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and spinach. Cook for 1–2 minutes, just until the spinach wilts. Remove from heat and let it cool slightly.

 

Mix the spinach with mozzarella, cherry tomatoes, fresh basil, salt, and pepper.

 

4. Stuff the chicken

Generously fill each chicken pocket with the mozzarella-spinach mixture. Secure the openings with toothpicks if needed.

 

5. Sear the chicken

Heat an oven-safe skillet over medium-high heat with a little olive oil. Sear the stuffed chicken for about 2–3 minutes per side, until beautifully golden brown.

 

6. Bake

Transfer the skillet to the preheated oven and bake for approximately 15–20 minutes, depending on the thickness of the chicken. Cook until the internal temperature reaches 165°F (74°C).

 

7. Make the balsamic glaze

While the chicken cooks, add balsamic vinegar, honey or brown sugar, olive oil, and minced garlic to a small saucepan. Bring to a gentle simmer and cook for 5–8 minutes, stirring occasionally, until slightly thickened.

 

8. Finish & serve

Remove the chicken from the oven and let it rest for 5 minutes. Drizzle generously with the balsamic glaze. Top with fresh tomatoes, basil, and a sprinkle of red pepper flakes.
