Mediterranean Loaded Stuffed Sweet Potatoes
Ingredients
- 3 medium sweet potatoes
- 2 tbsp olive oil, divided
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 3 cups baby spinach
- 1 medium avocado, diced
- ½ cup crumbled feta cheese
- Salt and black pepper, to taste
- Red pepper flakes or hot honey (optional)
Instructions
- Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, then prick each several times with a fork. Rub them with 1 tablespoon of olive oil and place them on a lined baking sheet.
- Roast for 40–45 minutes, or until the sweet potatoes are fork-tender and the skins are lightly crisp.
- While the potatoes roast, heat the remaining olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–6 minutes, stirring occasionally, until golden brown.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the spinach a handful at a time, stirring until it wilts completely. Season with salt and black pepper, then remove from the heat.
- Once the sweet potatoes are cooked, slice each one lengthwise without cutting all the way through. Gently fluff the inside with a fork to create a soft base.
- Spoon the warm mushroom and spinach mixture evenly into each sweet potato.
- Top generously with diced avocado and crumbled feta cheese.
- Sprinkle with red pepper flakes for a little heat or drizzle with hot honey for a sweet and spicy finish, if desired.
- Serve immediately while warm.
