Crispy Fried Lobster Bites with Zesty Remoulade
Ingredients
For the Lobster Bites
* 1 lb cooked lobster meat, cut into bite-sized pieces
* 1 cup all-purpose flour
* 1 tsp garlic powder
* 1 tsp paprika
* ½ tsp onion powder
* ½ tsp salt
* ¼ tsp black pepper
* 2 large eggs
* 2 tbsp milk
* 1½ cups panko breadcrumbs
* Vegetable oil, for frying
* Lemon wedges, for serving
For the Zesty Remoulade
* ½ cup mayonnaise
* 1 tbsp Dijon mustard
* 1 tbsp fresh lemon juice
* 1 tsp hot sauce
* 1 tbsp finely chopped pickles or relish
* 1 tsp capers, minced
* 1 clove garlic, minced
* 1 tbsp chopped parsley
* Salt and black pepper, to taste
Instructions
1. Prepare the remoulade first. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, hot sauce, pickles, capers, garlic, and parsley. Season with salt and pepper. Refrigerate while preparing the lobster.
2. In a shallow bowl, combine flour, garlic powder, paprika, onion powder, salt, and pepper. In a second bowl, whisk eggs with milk. Place panko breadcrumbs in a third bowl.
3. Pat the lobster pieces dry with paper towels. Dredge each piece in the seasoned flour, then dip into the egg mixture, and finally coat thoroughly with panko breadcrumbs.
4. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
5. Fry the lobster bites in small batches for 2–3 minutes, turning occasionally, until golden brown and crispy. Avoid overcrowding the pan.
6. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.
7. Arrange the crispy lobster bites on a serving platter. Garnish with fresh parsley and serve immediately with lemon wedges and the chilled zesty remoulade.
