Roasted Garlic & Herb Okra
This method removes the “slick” texture often associated with okra, leaving it crispy and flavorful.
500g Fresh Okra 
2 tbsp Extra Virgin Olive Oil 
3 cloves Garlic, minced 
1 tsp Dried Oregano or Thyme 
ยฝ tsp Paprika 
1 squeeze Fresh Lemon juice 
Pinch Salt and Black Pepper 
1. Prep the Okra
Wash the okra thoroughly and pat it completely dry with a towel.

Tip: Drying it well is the secret to keeping it crispy!
Trim the stem ends and slice the okra into 1-inch pieces or leave them whole if they are small. 
2. Season for Flavor
In a large bowl, toss the okra with olive oil, minced garlic, oregano, and paprika.

Ensure every piece is lightly coated in the oil and herbs. 
3. Arrange for Roasting
Spread the okra in a single layer on a baking sheet. Do not crowd the pan!

Crowding causes them to steam rather than roast.
4. Roast to Perfection
Place in a preheated oven at 400ยฐF (200ยฐC).

Roast for 15โ20 minutes, tossing halfway through, until the edges are golden brown and slightly charred.

5. The Final Touch
Remove from the oven and immediately add a squeeze of fresh lemon juice. 
Serve warm as a side dish or a healthy snack.
