This evening, I prepared a Weight Watchers-friendly skinny cinnamon apple stir fry, and it turned out absolutely delectable! Here is the recipe should you wish to try it yourself. To minimize the points, I opted for ‘I Can’t Believe It’s Not Butter’ spread. The recipe yields six servings, and if my calculations are accurate, it’s merely one point per serving. Please let me know if you discover otherwise, but they were indeed delightful.
Ingredients
- 1 tablespoon butter
- 1 pound apples (3-4 medium-sized), peeled and sliced (approximately 4 cups) (I used Honeycrisp)
- ¾ teaspoon ground cinnamon
- ½ cup sugar-free maple-flavored syrup
- ¼ cup water
- ¾ teaspoon vanilla extract
Instructions
- Place a medium-sized saucepan over medium-high heat. Add the butter and stir until melted.
- Add the apples and cinnamon, cooking and stirring frequently until the apples are lightly browned and just tender, about 6-8 minutes.
- Combine the syrup, water, and vanilla, then add to the apples. Cook, stirring frequently, until the mixture begins to bubble, about 1-2 minutes.
