- 1 teaspoon cornstarch (optional, for thickening)
For the Mushrooms and Udon:

- 1 pound mixed mushrooms (such as shiitake, cremini, and oyster), sliced
- 1 small onion, thinly sliced
- 2 green onions, sliced for garnish
- Sesame seeds for garnish (optional)
- Salt and pepper to taste
Instructions:
- Prepare the Udon Noodles:
- Cook the udon noodles according to the package instructions until al dente.
- Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
- Make the Honey Glaze:
- In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.
- If you prefer a thicker glaze, mix in cornstarch until dissolved.
- Cook the Mushrooms:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced mushrooms and cook, stirring occasionally, until they start to brown and soften, about 5-7 minutes.
- Add thinly sliced onion to the skillet and continue cooking until the onions are translucent and mushrooms are tender, about 3-4 minutes more.
- Glaze the Mushrooms:
- Pour the prepared honey glaze over the cooked mushrooms and onions in the skillet.
- Stir well to coat the mushrooms evenly with the glaze.
- Allow the glaze to simmer for 2-3 minutes until it thickens slightly and coats the mushrooms nicely.
- Combine with Udon Noodles:
- Add the cooked udon noodles to the skillet with the glazed mushrooms.
- Gently toss everything together until the noodles are well coated with the honey glaze and heated through, about 2-3 minutes.
- Season with salt and pepper to taste.
- Serve:
- Transfer the honey-glazed mushrooms with udon noodles to serving plates or bowls.
- Garnish with sliced green onions and sesame seeds if desired.
- Serve hot and enjoy your delicious honey-glazed mushrooms with udon!
