Honey-Glazed Mushrooms With Udon

Ingredients:

For the Honey Glaze:

  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch (optional, for thickening)

For the Mushrooms and Udon:

  • 8 ounces udon noodles
  • 2 tablespoons vegetable oil
  • 1 pound mixed mushrooms (such as shiitake, cremini, and oyster), sliced
  • 1 small onion, thinly sliced
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Udon Noodles:
    • Cook the udon noodles according to the package instructions until al dente.
    • Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
  2. Make the Honey Glaze:
    • In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.
    • If you prefer a thicker glaze, mix in cornstarch until dissolved.
  3. Cook the Mushrooms:
    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add sliced mushrooms and cook, stirring occasionally, until they start to brown and soften, about 5-7 minutes.
    • Add thinly sliced onion to the skillet and continue cooking until the onions are translucent and mushrooms are tender, about 3-4 minutes more.
  4. Glaze the Mushrooms:
    • Pour the prepared honey glaze over the cooked mushrooms and onions in the skillet.
    • Stir well to coat the mushrooms evenly with the glaze.
    • Allow the glaze to simmer for 2-3 minutes until it thickens slightly and coats the mushrooms nicely.
  5. Combine with Udon Noodles:
    • Add the cooked udon noodles to the skillet with the glazed mushrooms.
    • Gently toss everything together until the noodles are well coated with the honey glaze and heated through, about 2-3 minutes.
    • Season with salt and pepper to taste.
  6. Serve:
    • Transfer the honey-glazed mushrooms with udon noodles to serving plates or bowls.
    • Garnish with sliced green onions and sesame seeds if desired.
    • Serve hot and enjoy your delicious honey-glazed mushrooms with udon!
