  • Salmon fillets (around 1.5 pounds)
  • Asparagus (around 1 pound)
  • Butter (around ½ cup)
  • Garlic cloves (minced, 3 cloves)
  • Parsley (minced, 1 tablespoon)
  • Onion powder (1 teaspoon)
  • Salt (1 teaspoon)
  • Cracked pepper (½ teaspoon)
  • Lemon slices (4)

Instructions:

  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Spray a baking sheet with non-stick spray.
  3. Place the salmon fillets in the center of the baking sheet, leaving space between them.
  4. Arrange the asparagus around the salmon.
  5. In a separate bowl, whisk together melted butter, garlic, parsley, and onion powder.
  6. Drizzle the garlic butter sauce over the salmon and asparagus.
  7. Season everything with salt and pepper.
  8. Place a lemon slice on each salmon fillet.
  9. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

Tips:

  • You can use fresh or frozen asparagus for this recipe. If using frozen asparagus, thaw it completely and pat it dry before using.
  • For a richer sauce, you can use more butter or add a splash of white wine.
  • If you don’t have fresh parsley, you can use 1 teaspoon of dried parsley.
  • Serve this dish with rice, quinoa, or roasted vegetables.

Enjoy!
