Grilled Lemon Herb Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Lemon slices for garnish
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, and black pepper to create a marinade.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag, ensuring chicken is well-coated. Marinate in the refrigerator for at least 30 minutes, or ideally, overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and grill for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).
  5. Garnish with lemon slices and chopped parsley before serving.
