Baked Fried Chicken

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and lightly coat it with cooking spray.
  2. In a bowl, combine buttermilk, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper. Mix well.
  3. Dip each chicken thigh into the buttermilk mixture, ensuring it’s fully coated. Let excess liquid drip off.
  4. In a separate bowl, combine flour, additional paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
  5. Dredge each chicken thigh in the seasoned flour mixture, pressing the coating onto the chicken to adhere.
  6. Place the coated chicken thighs on the prepared wire rack.
  7. Lightly spray the top of the chicken with cooking spray to encourage browning.
  8. Bake for 40-45 minutes or until the internal temperature reaches 165°F (74°C) and the coating is golden and crispy.
  9. Allow the chicken to rest for a few minutes before serving.
