Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and lightly coat it with cooking spray.
- In a bowl, combine buttermilk, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper. Mix well.
- Dip each chicken thigh into the buttermilk mixture, ensuring it’s fully coated. Let excess liquid drip off.
- In a separate bowl, combine flour, additional paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
- Dredge each chicken thigh in the seasoned flour mixture, pressing the coating onto the chicken to adhere.
- Place the coated chicken thighs on the prepared wire rack.
- Lightly spray the top of the chicken with cooking spray to encourage browning.
- Bake for 40-45 minutes or until the internal temperature reaches 165°F (74°C) and the coating is golden and crispy.
- Allow the chicken to rest for a few minutes before serving.
