Chicken Fajita Wrap

Ingredients:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • Sour cream and salsa for serving

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat. Add sliced chicken and cook until browned and cooked through.
  2. Push the chicken to one side of the skillet, add a bit more oil if needed, and sauté the sliced bell peppers and onions until they are tender-crisp.
  3. Sprinkle fajita seasoning over the chicken, peppers, and onions. Season with salt and pepper to taste. Stir to coat everything evenly.
  4. Warm the flour tortillas in a separate pan or microwave.
  5. Assemble the wraps: Lay out each tortilla and add a portion of the chicken, peppers, and onions. Top with shredded lettuce, diced tomatoes, and cheddar cheese.
  6. Roll up the tortillas tightly to form wraps.
