Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp instant yeast
  • 1 tbsp olive oil
  • 1 cup warm water (plus 2โ€“3 tbsp if needed)

Instructions

1. Make the Dough

  1. In a bowl, mix flour, salt, sugar, and yeast.
  2. Add olive oil and warm water.
  3. Knead 8โ€“10 minutes until smooth and soft.
  4. Cover and let rise 1 hour (until doubled).

2. Shape

  1. Divide into 8 balls.
  2. Roll each into a thin circle (about 6โ€“7 inches).

3. Cook

  1. Heat a dry pan on medium-high.
  2. Place dough circle in pan.
  3. Cook until bubbles form โ†’ flip.
  4. It should puff up and make a pocket.
  5. Cook 1 more minute until lightly golden.

Stack in a towel to keep soft.
