Weight Watchers Vegetable Minestrone with Pasta
Ingredients:
- Carrots (cut into small pieces)
- Onions (cut into small pieces)
- Celery (cut into small pieces)
- Zucchini (cut into small pieces)
- Summer squash (cut into small pieces)
- String beans (cut into 1-inch pieces)
- Canned chickpeas (1 can, rinsed and drained)
- Vegetable broth
- Uncooked whole wheat pasta (12 oz, spirals or other tube pasta)
- Fresh basil (¼ cup, chopped)
Instructions:
- Combine all ingredients except the pasta and basil in a 5- or 6-quart slow cooker.
- Cover and cook on high for 4-5 hours or on low for 8-10 hours, until the vegetables are tender.
- Cook the whole wheat pasta according to package directions, omitting the salt if desired.
