Ingredients:

  • String beans (cut into 1-inch pieces)
  • Canned chickpeas (1 can, rinsed and drained)
  • Vegetable broth
  • Uncooked whole wheat pasta (12 oz, spirals or other tube pasta)
  • Fresh basil (¼ cup, chopped)

Instructions:

  1. Combine all ingredients except the pasta and basil in a 5- or 6-quart slow cooker.
  2. Cover and cook on high for 4-5 hours or on low for 8-10 hours, until the vegetables are tender.
  3. Cook the whole wheat pasta according to package directions, omitting the salt if desired.
  4. Stir the cooked pasta and fresh basil into the soup before serving.
