Turkish Zucchini Fritters (Mücver)
These fritters are crispy on the outside, soft inside, and full of fresh vegetables and herbs. They can be pan-cooked or baked for a lighter option.


🧾 Ingredients

  • 2 zucchinis, grated

  • 2 carrots, grated

  • 1 potato, grated

  • 2 eggs

  • 1 onion, finely chopped

  • A handful of fresh parsley, chopped

  • 1 cup all-purpose flour

  • 1 small teacup corn flour (for extra crispness)

  • 1 teaspoon baking powder

  • 3 tablespoons vegetable oil (for cooking)

  • Salt, black pepper, and red chili flakes (to taste)

1. Prepare the Vegetables

Place the grated zucchini, carrots, and potato in a large bowl.

Sprinkle lightly with salt and let them rest for 5–10 minutes.

Transfer the vegetables to a clean cloth or use your hands to squeeze out as much liquid as possible.
(This step helps the fritters become crisp instead of soft.)


2. Prepare the Batter

In a large mixing bowl, crack in the eggs and whisk lightly.

Add:

  • Squeezed vegetables

  • Chopped onion

  • Chopped parsley

Mix well.

Add:

  • All-purpose flour

  • Corn flour

  • Baking powder

  • Salt, black pepper, and red chili flakes

Stir until a thick batter forms.


3. Shape the Fritters

You can cook these two ways:

🔹 Baking Method:

Line a baking tray with parchment paper.

Spoon portions of the batter onto the tray and flatten slightly into round shapes.


🔹 Pan Method:

Heat vegetable oil in a non-stick pan over medium heat.

Drop spoonfuls of batter into the pan and gently flatten.


4. Cook Until Golden

If Baking:

Preheat oven to 180°C.

Bake for 20–25 minutes, turning halfway through, until both sides are golden and firm.


If Pan Cooking:

Cook each fritter for 3–4 minutes per side until golden brown and fully cooked inside.

Place on paper towels to absorb excess oil.


🍽 Serving

Serve warm with:

  • Garlic yogurt sauce

  • Plain yogurt

  • Lemon wedges

  • Fresh herbs

Mix together:

  • 1 cup plain yogurt

  • 1 small garlic clove (crushed)

  • 1 teaspoon lemon juice

  • A pinch of dried mint or salt
