My bestie said: “These Blueberry Oat Bars are better than any granola bar I’ve bought.”
Mediterranean, gluten-free, wholesome, and naturally sweet, she asked me to bake a batch just for her next time I visit her.
Ingredients
For the Oat Base & Topping
2½ cups rolled oats
1 cup all-purpose flour
¾ cup brown sugar
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
¾ cup melted butter (or coconut oil)
1 tsp vanilla essence
For the Blueberry Filling
2 cups blueberries (fresh or frozen)
¼ cup sugar
1 tbsp lemon juice
1 tbsp cornflour (cornstarch)
Method
Prepare Blueberry Filling
Add blueberries, sugar, lemon juice, and cornflour to a saucepan.
Cook on medium heat, stirring until thick and jam-like.
Remove from heat and let it cool.
Make Oat Mixture
In a bowl, mix oats, flour, brown sugar, baking soda, cinnamon, and salt.
Add melted butter and vanilla.
Mix until crumbly but moist.
Assemble
Preheat oven to 180°C (350°F).
Line a baking dish with parchment paper.
Press ⅔ of the oat mixture firmly into the pan.
Spread blueberry filling evenly on top.
Sprinkle remaining oat mixture over the filling and lightly press.
Bake
Bake for 30–35 minutes until golden brown.
Cool completely before slicing (important for neat bars!).
