INGREDIENTS:
  • ½ medium red bell pepper chopped
  • ½ medium green bell pepper chopped
  • 2 medium scallions chopped
  • 1 can (15 oz) corn drained
  • 1 can (15 oz) black beans drained and rinsed
  • 1 tbsp corn oil
  • 2 tbsp lime juice
  • 8 ozs boneless skinless chicken breast cooked and chopped
  • 2 tbsp reduced-sodium taco seasoning mix
  • 4 tbsp fresh cilantro chopped
  • 4 tbsp sour cream – reduced-fat
INSTRUCTIONS:
  1. In a large mixing bowl, add red sweet pepper, green bell pepper, scallions, corn, and black beans. Mix well.
  2. Add lime juice and oil to bean mixture; toss to coat
  3. Mix in (toss) taco seasoning, cilantro, and chicken.
  4. Top each serving with sour cream, if desired.
