Sugar-Free 3-Ingredient Cowboy Cookies
These are naturally sweetened and packed with fiber, making them a great diabetic-friendly option.
What You Need:

2 Large Ripe Bananas (The riper they are, the sweeter the cookies will be).

1 ½ Cups Rolled Oats (Use certified gluten-free oats if needed).

⅓ Cup Sugar-Free Chocolate Chips (Sweetened with stevia or erythritol).
How to Make Them:

Preheat & Prep: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper or a silicone mat.

Mash: In a medium bowl, mash the bananas with a fork until they are mostly smooth with few lumps.

Mix: Stir in the rolled oats and the sugar-free chocolate chips until well combined.

Scoop: Use a spoon or cookie scoop to place mounds of the dough onto the baking sheet. Flatten them slightly with the back of the spoon, as these cookies won’t spread much while baking.

Bake: Bake for 12–15 minutes or until the cookies feel firm to the touch and are slightly golden.

Cool: Let them cool on the pan for 5 minutes before moving them to a wire rack.
Tips for “Cowboy” Flair:
If you want to get closer to the traditional “Cowboy” style while staying low-calorie, you can add a pinch of cinnamon or a tablespoon of crushed walnuts to the mix!
