Ingredients:
- 1 cup fresh or frozen strawberries
- 1 small beet, cooked and peeled
- 1 small piece of fresh ginger, peeled (about 1 inch)
- 1 ripe banana
- 1/2 cup plain Greek yogurt
- 1/2 cup almond milk (or any milk of your choice)
- 1 tablespoon honey or maple syrup (optional, depending on sweetness preference)
- Ice cubes (optional, for a colder smoothie)
Instructions:
- Prepare the beet: Wash the beet thoroughly, trim off the ends, and wrap it in aluminum foil. Roast in a preheated oven at 400°F (200°C) for about 45-60 minutes or until tender when pierced with a fork. Let it cool, then peel off the skin. Alternatively, you can boil or steam the beet until tender.
- Peel and chop the ginger into small pieces.
- In a blender, combine the strawberries, cooked beet, chopped ginger, banana, Greek yogurt, almond milk, and honey or maple syrup (if using). If you prefer a colder smoothie, add a handful of ice cubes as well.
- Blend the ingredients on high speed until smooth and creamy. If the smoothie is too thick, you can add more almond milk or water to reach your desired consistency.
- Taste the smoothie and adjust sweetness if necessary by adding more honey or maple syrup.
- Once blended to your liking, pour the smoothie into glasses and serve immediately. Garnish with a few slices of fresh strawberry or a sprinkle of chia seeds if desired.
- Enjoy your refreshing and nutritious Strawberry Ginger Beet Smoothie!
