Ingredients:
- 2 cups spinach – 0 points
- 1 cup artichoke hearts in water, drained – 0 points
- 1 Joseph’s Flax whole wheat flour pita, toasted – 1 point
- 1/4 cup fat-free mozzarella cheese, rinsed and drained (rinsing the cheese makes it melt better) – 0 points
Instructions:
- Sauté spinach, artichoke hearts, and cheese in a little olive oil spray.
- Toast the pita.
- Stuff the toasted pita with the spinach mixture.
- Enjoy!
