Spinach and Feta Stuffed Omelette

Ingredients:

  • 3 eggs
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red bell pepper, diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. In a bowl, beat the eggs and season with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add spinach, cherry tomatoes, and red bell pepper to the skillet. Sauté until the vegetables are tender.
