Spinach and Cheese Puff Pastry Bites

Prep the Spinach: In a small skillet over medium heat, sauté the chopped spinach until wilted. Transfer it to a clean kitchen towel and squeeze out all excess moisture. This prevents the pastry from getting soggy.

Mix the Filling: In a medium bowl, combine the wilted spinach, ricotta cheese, Parmesan, garlic powder, and nutmeg (if using). Season with a pinch of salt and black pepper.

Prepare the Pastry: Unroll your thawed puff pastry sheet on a lightly floured surface.

To get the “nest” look in the photo: Use a round cookie cutter to cut circles. Use a smaller cutter (or a knife) to lightly score a smaller circle inside each one (don’t cut all the way through). This creates a “border” that rises around the filling.

Fill the Bites: Prick the center of each pastry circle with a fork to keep it flat. Spoon about a tablespoon of the spinach-cheese mixture into the center of each circle.

Egg Wash: Beat one egg with a teaspoon of water. Brush the exposed pastry edges with the egg wash for that deep golden-brown shine seen in your image.

Bake: Preheat your oven to 400°F (200°C). Place the bites on a parchment-lined baking sheet and bake for 15–18 minutes, or until the pastry is puffed and golden.

Serve: Let them cool for 5 minutes on the tray before serving so the cheese sets slightly.

For extra flavor, you can sprinkle a tiny bit of extra Parmesan or a pinch of red pepper flakes on top right before they go into the oven.
