Smothered Garlic Mushroom Pork Chops

4 Boneless Pork Chops (about 1 inch thick)

8 oz (225g) Cremini or White Mushrooms, sliced

2 cloves Garlic, minced

1 cup Chicken Broth (low sodium)

2 tbsp Olive Oil or Butter

Instructions

Sear the Chops: Season pork chops generously with salt, pepper, and a bit of garlic powder. Heat oil in a large skillet over medium-high heat. Sear the chops for 3–5 minutes per side until golden brown. Remove from the pan and set aside (they will finish cooking in the sauce).

Sauté Mushrooms: In the same skillet, add the sliced mushrooms. Cook until they release their moisture and turn a deep golden brown. Stir in the minced garlic and dried herbs, cooking for just 1 minute until fragrant.

Deglaze: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan (that’s where the flavor is!).

Simmer and Thicken: Stir in the heavy cream. Let the sauce simmer for 3–5 minutes. If you prefer a thicker gravy, whisk in a tiny bit of xanthan gum at this stage.

Combine: Place the pork chops back into the skillet, spooning the mushroom sauce over them. Simmer for another 2–3 minutes until the chops are cooked through but still juicy.
