2 medium sweet potatoes (peeled & cubed)

Salt & black pepper (to taste)

¼ cup feta cheese (crumbled)

¼ cup walnuts or pecans

2 tbsp pumpkin seeds (optional)

For the Dressing:

2 tbsp olive oil

1 tbsp balsamic vinegar
