Potato Cheese Pancakes

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 1/4 cup finely chopped green onions
  • 2 eggs, beaten
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil for frying
  • Sour cream and additional green onions for garnish (optional)

Instructions:

  1. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated potatoes, shredded cheddar cheese, flour, green onions, beaten eggs, garlic powder, salt, and pepper. Mix until well combined.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Spoon the potato mixture onto the hot skillet, forming pancakes. Flatten with a spatula and cook until golden brown on both sides, about 3-4 minutes per side.
  5. Place cooked pancakes on a paper towel to absorb any excess oil.
  6. Serve hot, optionally garnished with sour cream and additional green onions.
