Ingredients

  • Chia Seeds: 1/4 cup

  • Milk of Choice: 1 cup (almond, coconut, or dairy milk)

  • Sweetener: 1 tablespoon maple syrup or honey (optional)

  • Vanilla: 1/2 teaspoon vanilla extract

  • Toppings: Fresh strawberries and blackberries (as pictured)

Instructions

  1. Combine: In a glass jar or medium bowl, whisk together the chia seeds, milk, vanilla extract, and your chosen sweetener. Ensure there are no large clumps of seeds at the bottom.

  2. Rest and Stir: Let the mixture sit for about 5–10 minutes, then give it one more thorough stir. This second stir is crucial to prevent the seeds from settling and ensures a creamy, uniform texture.

  3. Chill: Cover the jar and refrigerate for at least 2 hours, though leaving it overnight yields the best results. The seeds will absorb the liquid and expand into a pudding-like consistency.

  4. Assemble: Once set, take the pudding out of the fridge. If it is too thick for your liking, splash in a little extra milk.

  5. Garnish: Top generously with sliced strawberries and plump blackberries.

Why It Works

Chia seeds are incredible little powerhouses. When soaked, they develop a gelatinous coating that creates a texture similar to tapioca pudding. They are rich in Omega-3 fatty acids, fiber, and protein. By using berries, you add a bright acidity and natural sweetness that perfectly complements the creamy base.

Pro Tip: For a “parfait” look, layer the pudding with a bit of berry compote or Greek yogurt before adding the fresh fruit on top!
