Ingredients
2 cups cooked chicken, diced
1½ cups mushrooms, sliced
1 small onion, chopped
1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
4 large eggs
1 cup milk
2 tablespoons butter or olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
Directions
Preheat oven to 180°C (350°F). Grease a casserole dish.
Heat butter in a pan and sauté onion until soft.
Add mushrooms and cook until moisture evaporates.
In a bowl, whisk eggs, milk, salt, pepper, and garlic powder.
Add chicken, mushroom mixture, and half of the cheese. Stir well.
Transfer mixture to the baking dish.
Sprinkle remaining cheese evenly on top.
Bake for 35–40 minutes until firm and golden.
