WW Recipe of the Day: Gluten-Free Microwave Mug Banana Cocoa Pudding Cake
Satisfy those chocolate urges with this simple microwave pudding cake for one. Without any flour to help absorb the egg and banana, the texture of this cake reminds me a lot of bread pudding—semi-solid yet slightly mushy.
While it only takes minutes to prepare and cook, you could always thoroughly mix all the ingredients in the mug, then cover and refrigerate until you’re ready to heat and enjoy.
Once cooled, enjoy your cake directly from the mug, or remove it to a small plate.

HOW TO MAKE MICROWAVE MUG PUDDING CAKE
Step 1: Gather and prepare all ingredients.
Step 2: Spray the inside of the mug with nonstick spray.
Step 3: Add cocoa powder, sugar, salt, egg, and mashed banana to a mug and blend with a fork until thoroughly combined, smoothing out any lumps.
Step 4: Microwave (affiliate link) on HIGH powder for 60 seconds. Check if the cake is puffy and set in the center. If not, microwave on HIGH for 30 seconds more, or until the cake is set in the center.

A very soft, over-ripe medium banana covered with brown spots will give you about ½ cup mashed. Be sure to thoroughly mash the banana with a fork until it’s almost liquid before measuring out ½ cup.
Turn this into a chocolate chip cake by adding 1 – 2 teaspoons of mini semisweet chocolate chips before microwaving. Be sure to add 1 to 2 SmartPoints with this addition.
