Mediterranean Ground Chicken Pita with Hot Honey Feta Cream & Pickled Onions
Ingredients:
- 1 lb ground chicken
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 4 large pita breads or flatbreads
- 1/2 cup pickled red onions
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
For the hot honey feta cream:
- 1 cup crumbled feta cheese
- 1/2 cup Greek yogurt
- 2 tbsp honey
- 1–2 tsp hot sauce (adjust to taste)
- 1 clove garlic, minced
- Juice of 1/2 lemon
- 1 tbsp olive oil
Directions:
Heat olive oil in a skillet over medium heat.
Add onion and cook until softened, about 3–4 minutes.
Add garlic and cook for 30 seconds until fragrant.
Add ground chicken, cumin, paprika, oregano, salt, and pepper. Cook until browned and fully cooked, breaking apart with a spoon.
In a bowl, mix feta, Greek yogurt, honey, hot sauce, garlic, lemon juice, and olive oil until smooth and creamy.
Warm pita breads in a pan or oven until soft and slightly toasted.
Spread a layer of hot honey feta cream on each pita.
Top with cooked chicken, pickled onions, cherry tomatoes, cucumber, parsley, and mint.
Serve immediately.
